An Anniversary Party and Our Little Weekend

On Saturday, we left early in the morning to go down to my aunt and uncle's (my Dad's brother and his wife) 35th anniversary party, that was held at there church.  We packed yummy lunches on our honey oatmeal buns!  At the party, they had cake, mints, trail mix, and punch.  It was a nice little party.  I am sure my dad really enjoyed it, since he got to see some people he hasn't seen for a while.

My sister just couldn't wait to see our cousin's little girl!  By the end, they were quite connected.

After the party, my aunt and uncle, their daughter (my cousin) and her husband and daughter, and our family all went out to eat.  I didn't really want to go to a chain restaurant, but my dad didn't want to go somewhere very expensive.  A hamburger sounded good.  So, we ended up going to Red Robin.  We had to wait a little while before we got seated, but it wasn't too long of a wait.  We waited outside, and then when we went inside and got seated, the place was FREEZING.

I got just a simple burger with a side of a fruit salad.  This summer I realized how even better a hamburger is with lettuce, tomato. onion, pickles, and ketchup.  YUMMY!!  I got the burger on a whole grain bun.  For being a hamburger place, I thought the burger would have been better.  It wasn't a bad burger, but not the best (the ones at the Twins stadium are the best!).

Our family stayed in a hotel that night.  It was a Residence Inn by Marriott, the kind of hotel that is set up for people staying for long periods of time.  The room set up worked great.  There were two rooms.  Each had a bed and a bathroom.  Then there were doors closing off the rooms form the middle area, where the kitchen, a little living room was.  So, I slept out the middle area, on a roll-away, with both doors to the rooms closed.  When we sleep at a hotel, I am usually annoyed with someone's loud breathing or snoring in the middle of the night, and no one gets a good night sleep (because I am annoyed).  So, this time, I couldn't hear any of those noises to annoy me.

In the morning, I went for a little walk with my mom, and then had to do an elliptical workout.  Once we were all ready for the day, we hit the road.  We ended up pretty much getting a tour of the towns that my dad grew up in.

This is a garage that we drove by... if we were to build a garage, this is what my mom would want it to look kind of like.  So, she needed to take a picture of it.

And, the house too.

We actually did a lot during the "tour".  My Dad showed us around the towns that he grew up in.  We watched and listened for trains (something my Dad did as a kid).  We heard stories about his childhood.

Then, there was this super cute antique shop in one of the towns my Dad grew up in.  My mom and I really wanted to go in.  We almost didn't, but I am glad we did. We actually had some really fun, great finds!

I found this ribbon.  The ribbon is nothing special, but I just LOVE the big, wooden bobbin!

This is a metal turtle for in the garden (outside).  I love gardening, and I collect little turtles.  So, since it is so cute, why not get it?  When we were unloading the car, my mom took it out and set it here.  I don't know if I am going to keep it here, but it actually looks really cute here, so I probably will.

After the touring through the towns, we went to this little state park... and we hike up to this pavillion (is wasn't that far).  The trail they had to hike on was really nice.
We did take a picture up at the pavillion, but even though it was really cute, it didn't turn out.  So, I'm not posting it.  And, finally, we actually hit the road home.

Honey Oatmeal Buns

These buns are super yummy!  They make great ham or turkey sandwiches.  This is what we make if our family is going to be on the road, and we need some lunch or supper.  Everyone likes them!

You do make them in the bread machine.

We divide the dough into 8 equal pieces.  They are a good sized sandwich, but you could make them bigger or smaller if you want.  You can also divide the dough into 24 pieces to make dinner rolls... they would be really yummy with chicken wild rice soup.

I did mine with turkey, a little lettuce, and GUACAMOLE!  Super delicious!  They are also really good with just ham... or you could do whatever you like on it.

Honey Oatmeal Buns

1 egg
1/4 cup milk
1/2 cup water
3 T. honey
1 T. vegetable oil
1 T. sugar
1 t. salt
2 cups bread flour
2/3 - 3/4 cup oatmeal
2 t. yeast

Place ingredients in bread machine.
Use roll/dough cycle on bread machine.
When dough is finished, divide it into 8 (or however many you want) pieces, and place on a cookie sheet lined with parchment paper.
Let rise.
Bake at 350 degrees for 10 min.

Girls Cross Country Beginning of the Season Bar-B-Que

I LOVE having parties!  And, lately, I really had an urge to have one.  So, I did.  It was kind of a last minute one... but it still worked out.  Since, cross country just started, and it is still summer, why not have a bar-b-que.  Not all the girls were able to come, but 5 out of 7 did.  And, we still had fun!

The Menu:
Grilled BBQ Chicken
Potatoes
Corn on the Cob
Dinner Rolls
Fruit and Veggies

The food was taking longer that we thought it would, so we sort of dug into the dinner rolls.

We would have eaten outside, but eating outside at our house, means getting attacked by cat that want your food.

After supper, we decided to do a photo shoot!  We got a little silly, but had fun!

We did do a little dressing up, but those pictures were really silly and really didn't turn out.
(You can see our dress up clothes on the ground here, after we got sick of wearing them.)

We were going to have a bonfire, but we got a little too carried away taking pictures, and every one had to go home (practice the next morning).  So, my brother and I went out, to our not so hot fire, and roasted a few s'mores.

Chicken Enchiladas

I love Mexican food!  And, enchiladas are one of the best!  I have tried so many different enchilada recipes, but this is by far the best.  They are super easy to make, and yummy.  A lot of the time, I make them up and then put them in the fridge to bake and eat later, or the next day.  They do take a bit longer to bake if you have refrigerated them, though.

Here's How to Make Them!

Throw in the chopped pepper and onion in with chicken last minute or two of cooking.  We buy rotisserie chicken, shred it, and bag it up to freeze.  That way we always have shredded, cooked chicken on hand for cooking.  So, I just start with mixing the chicken, pepper, and onion together in a saucepan over low heat.

I do about 3 cups of chicken, and then just throw in some chopped pepper and onion.

Add 1 cup of salsa.  If it looks as if you need more (too try) because you have a little extra chicken, pour some more in.  Mix in the salsa.

Mix in 2 heaping teaspoons of cumin.  Let simmer and stir for 5 minutes.  It will start to smell really delicious!

Add 5 oz. cream cheese.  If you want to, you can soften it, but I just throw it in.  The heat will soften it.

With a spatula, break it up into cubes.  Stir until the cream cheese melts.

Place some of the chicken mixture in each tortilla.  Roll up tightly.  It usually takes me about 8 tortillas to us up to chicken mixture.  Just put whatever amount of meat you would like in, and roll up.  But, another thing to remember, too many tortillas won't fit in one pan.

Pour the remaining salsa over the top.

Spread it over evenly.  Cover with foil.  Then, either put in preheated oven of 350 degrees and bake for 25-30 minutes (or until hot), or refrigerate.

The last few minutes of baking, sprinkle cheese over the top.  Put back in the oven, uncovered, until the cheese melts.

Serve and enjoy.  You can top yours with sour cream, diced tomatoes, salsa, guacamole, etc.  I LOVE mine with salsa and guacamole!  I love guacamole!

Chicken Enchiladas

3 cups shredded, cooked chicken
2 1/2 cups salsa
2 heaping teaspoons ground cumin
1 cup chopped red or green pepper (I just throw some in)
1/2 cup sliced green onions (I just throw some in)
5 oz. cream cheese
Flour tortillas
Cheese
Topping such as:  sour cream, diced tomatoes, salsa, guacamole

Combine chicken, pepper, and onion in a saucepan.  Add 1 cup salsa and cumin.  Simmer and stir for 5 minuets.  Add cream cheese, stir until it has melted.
Place some chicken mixture in a tortilla and roll up tightly.  Place in a greased pan.  Spread the remaining salsa over the top.  Cover with tin foil.
Bake at 350 degrees for 25-30 minutes, or until hot.  Sprinkle with cheese and bake, uncovered, until the cheese has melted.
Serve.  Top with additional topping if desire.  And, enjoy!

Fresh Picks of the Day - August 21, 2013

Well, since I was just at cross country camp, and haven't been picking veggies for a couple day, I thought there would be a bunch of veggies to pick... but there weren't, at least not green beans.  I thought the green bean plants would be overflowing with green beans, but, no, they were overflowing with buds.  So, I guess there will be a lot coming.

I picked a few green beans, a lot of pea pods, tomatoes, and 2 green peppers.  I have decide to give up on the peas.  They are best if you do something with them right away after they are picked.  But, you only get a few at a time, not enough to do anything with.

We are overflowing with pea pods, so I am going to have to find some people to share them with!  I love sharing people fresh veggies form the garden!  And luckily, I did!

Cross Country Camping Trip

This last Sunday, Monday, and Tuesday, I have been at cross country camp.  Usually camp is in the middle of July, but with our coach's, Vies, new summer running program, he changed it to now, during the season.  You had to qualify to go camping.  Which, I didn't do (I sprained my ankle).  But only one girl, Tenley, qualified to go, and the top 6 boys.  Since it would just be akward for one girl to go, I went a long to company her, and to help my coach's wife, Diane, if she needed any help.

We left last Sunday at about 12:30, and arrived back home Tuesday night around 7:15.  Our coach has a camper in Lanesboro, so we just set up some tents right on his camp sight.  His camp sight is right on the river, so you can sit around the camp fire and look out at the river.  We did lots of fun activities.  Here's what we did:

The Workouts

On Sunday, before we left, I did an elliptical  workout.  I went on it for 20 min. and that machine does get you breathing and sweating (something I haven't done for awhile).  The elliptical is much different from running, and I love running WAY more.

Before we got to Lanesboro, we stopped in Preston and the runners did a running workout.  They did an out and back on the bike path.  They ran for 20 min. out, and then tried to get back to the starting point before the next 20 min.  I biked along Tenley, to keep her company.  Right after the run, we all jumped on our bikes and headed to Lanesboro, about an 11 mile bike ride.

On Monday morning, we got up at 7:00, ate a light breakfast, and then headed to Forestville State Park, for a trail run.  The runners ran a great trail workout there.  They ran about 7 miles.  During that 7 miles, they run up to Pioneer Cemetery, and in the woods, going up and down rolling hills.  I had stretched with them, and them ran about a 100 meters, as for my workout.  Then, my job was to get to certain points on the trail, and to direct the runners which way to go.  You can get lost on these trails, but luckily no one did.  I biked form point to point.  After they finished, we walked the beginning of the trail that they would be running the next day.  That was supposed to be a cool down, and to familiarize them with the trail.  After that, we went back to camp for lunch.

After lunch, I went on about a 10 mile bike ride with my coach.  First we bike up to this trout hatchery, and he showed me around. It was actually pretty interesting.  Then, we finished our bike ride of with going up hill for 2 mile.  We thought we were going into the wind going up hill, but then when we turned around to go down hill, we were going into the wind even more.

Later Monday afternoon, the runners ran to Whalan, which is about 4 miles.  In Whalan, there is The Aroma Pie Shoppe, so Vies treated everyone to pie and ice cream.  I didn't want any though, but the place was cute to go in.  After stopping for pie, we all biked back to camp, which was a little over 4 miles.  When we got back to camp, we got ready (showered), and soon headed into town to supper.

On Tuesday, once again, we got up at 7:00, ate a light breakfast, and headed out to Forestville State Park, for another trail run.  This was about a 6 mile run, with some hills.  I again stretched with the group, and then ran for 7:44!  That is the longest I have ran in FOREVER!  My ankle felt pretty good.  It was a little tight and stiff, but it got looser as I went (also as the day went on).  Then again, I got to a point on the trail, to direct the runners which way to go.  When we were done, we headed back to camp for brunch.

Later Tuesday afternoon, the runners did an easy run.  They ran for 24 minuets right around in Lanesboro.  I biked with Tenley as she ran.  After the afternoon run, we backed up camp, got some ice cream, and were on our way back home.

The Fun

I guess, you kind of make your own fun at cross country camp.  Usually there are more that just two girls, but Tenley and I managed to have some fun.  Each day, we had a few hours of down time.  A lot of the time, you are so exhausted, you just want to sit around and do nothing.

On Monday, during some of our free time, I went on a bike ride with Vies.  That is when he showed me the trout hatchery.  Later, he ended up showing the entire group it too.  On Tuesday, the boys went tubing and Tenley and I walked around town, looking in the shops.  Tenley and I both had some activites (drawing, books, bracelet making, ect.) along to do.  The boys ended up played a bit of horse shoes.

Both nights we had a camp fire.  We could sit around the fire, that was right off the river.  Nothing too exciting happened there... no singing, stories, or anything, but I guess it's not that kind of camp.  The second night, the boys roasted some s'mores.  They weren't real s'mores though... so why bother having one?  It was a marshmallow with those fudge cookies.  If I am going to eat a s'more, I want it be an old-fashion, traditional s'more... graham crackers with a piece of chocolate and marshmallow in the middle!

The Food

The food at cc camp is not to the quality that I am used to.  The first night at camp, we usually have hotdogs.  My coach knows I like eating healthier, so a couple of days before camp, he asked me if I would eat a hotdog.  I said if it was a really good, high quality, all-beef hotdog, that was cooked over a campfire, I probably would.  Since the food isn't always what I really want to eat, I decided I wanted to bring some of my own, even if it needed to be refrigerated.  I asked Vies if I could bring some refrigerated food, and asked like what.  Being on the spot, a said maybe some yogurt or something.  He said that there isn't much room in the fridge, so it can't take up much room.  So, I came up with a plan.  I was going to fit all my refrigerated food in a plastic container, and then go up to Diane and politely asked if could put this in the fridge.  She would just have to say yes... and she did (the fridge wasn't that full)!  In the container it fit in some yogurt, granola, 3 slices of homemade bread, some sandwich meat (which I put in a freezer bag and froze, so that it would defrost during traveling and not spoil), a some good peanut butter.  Also along with me I had some other food that didn't need to be refrigerated, like nuts and granola bars.

So, for Sunday supper, we had hotdogs over a campfire.  Diane said that since we were a smaller group than usual, she was able to spend more on hotdogs and get better ones (they usually are cheaper one).  I think that Vies told her to get better ones though, because she even made a point to say what kind they were (Grandma Alice's, all-beef, skin on hotdogs).  I approved of those.  Along with the hotdogs, Diane made her really good beans, and she served carrots, bars, and cookies (actually I made the cookies.  they were my oatmeal chocolate chip ones and they were a hit.  Diane even asked for the recipe!).  It was funny, before the real food was served, she put out carrots, and everyone was so famished that they devoured them.  And for an "appetizer" she let every one have one cookie, no one was hesitant to having one.  At camp... you die for food.  After supper, we walked into town.  We all got ice cream.  I got maple nut in a dish... yummy.

For a light breakfast, before the morning run each day, Diane served bagels with peanut butter and jelly, fruit, and juice.  On the first morning, Diane let me know that the juice had no added sugar to it.  That mush mean I should have some.  I think she got that kind of juice because of me.  Tenley isn't a fan of the kind of food they serve either, but she thinks that since I was along, the food was better.

For Monday lunch, Diane served cold meat sandwiches, chips, and a few carrots.  The meat she buys is really cheap, icky meat.  So, that is why I brought my own.  When Diane was telling every one what there was for lunch, she said this is turkey, or that is what the package says, and this is ham.

For supper Monday night, went go into town to a restaurant.  The girls always go to Peddle Pushers, so that is where Tenley and I went.  I really wanted a hamburger, but when I say the menu, I decided to be adventurous, and try something new.  I got grilled tilapia tacos.  They were topped with guacamole, lettuce, black bean and corn salsa, and chipotle mayo.  I asked for the chipotle mayo on the side because I didn't want a lot of it.  What was on the side wasn't even very much though, but having just a little was really spicy for me. I wouldn't say they were the best fish tacos (the ones by Lake Calhoun were better), but they were pretty good.  As a side, I had a bowl of fresh melon.

The restaurant was the same one we always go to, and the menu was pretty much the same (maybe a few more options, and healthier ones), but it had been remodeled.  It was really cute.

Then on Tuesday, Diane made a brunch.  They usually get rolls from a bakery in Lanesboro, but they were closed, so we made do with the leftover there were.  Diane made her usual egg bake, heated up the boys leftover pizza, served bread, peanut butter and jelly, fruit, and cookies.

Before we hit the road to go home, we stopped in Lanesboro to get ice cream.  I ended up only getting vanilla in a waffle cone.  I couldn't decide which kind to get (I am always the last to decide), so I ended getting vanilla, which is always good.

Cross country camp is fun and tiring.  It is good to get home... and to sleep in my own bed, where the ground isn't hard and bumpy!
