My Oatmeal Chocolate Chip Cookie Recipe


This is my oatmeal chocolate chip cookie recipe.  They are so good!  SO GOOD!
I blogged the recipe before, here, but the pictures weren't very good.

 I make them with chocolate chips, or raisins.  But, I am sure they would be excellent with lots of different add-ins.  You could do nuts, dried fruit, white chocolate chips, or a combination.




Oatmeal Chocolate Chip Cookies

1/2 cup + 3 T. butter
1 cup sugar
1 cup brown sugar
1 t. vanilla
2 eggs
2 cups sifted flour
1 t. baking soda
1/2 t. baking powder
1 t. salt
2 cup rolled oats (I do 1 c. old-fashion and 1 c. quick-cooking)
1 cup chocolate chips or raisins

Cream together the butter, sugar, brown sugar, and vanilla.  Add the eggs.  Combine the flour, salt, baking soda, and baking powder.  Add the flour mixture to the sugar mixture.  Stir in the oatmeal and chocolate chips or raisins.  Spoon into balls.  Place 2 inches apart on a cookie sheet lined with parchment paper.  Flatten with bottom of glass that has been pressed in sugar.  Bake at 350 for 8-11 minuets.  Enjoy!


P.S. These make really good ice cream sandwiches.  Just simply spread a thick layer of vanilla ice cream on one cookie.  Press another cookie on top.  Eat or wrap up (in plastic wrap, a baggie, aluminum foil) and freeze for later.  So Good!
